Ingredients:
- 16-ounce bag of frozen, shredded hash browns (thawed)
- 8 eggs, beaten, divided
- 2 tablespoons all-purpose flour
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- 2 cups finely chopped fresh broccoli florets
- 1 cup shredded extra-sharp Cheddar cheese
- 3/4 cup finely diced smoked ham
- 3/4 cup reduced-fat sour cream
- 1/4 cup minced fresh chives
- 1/8 teaspoon freshly ground pepper
Directions:
- Preheat oven to 375°F.
- Prepare a 9-inch springform pan with cooking spray.
- Place pan on a baking sheet (to catch any spills while cooking).
- For the crust, in a large bowl, toss the shredded hash browns with 1/4 cup of the beaten egg mixture, flour, oil and salt, stirring to combine.
- Put the mixture into the springform pan, covering the bottom and sides.
- Place in the oven and bake for 30 minutes, or until potatoes are starting to brown.
- Remove pan from the oven and add the chopped broccoli, shredded cheese and diced ham.
- In a medium-sized bowl, beat the remaining eggs, sour cream, chives and pepper until well mixed.
- Place the egg mixture into the springform pan and place in oven to bake for 1 hour, until the center is set.
- Let cool and serve.
