Caramelized bananas with vanilla ice cream



2 medium firm bananas, peeled

1/2 tbsp butter

3 tbsp light brown sugar

1/4 cup orange juice

1/8 tsp ground cinnamon

1 cup low-fat vanilla ice cream, or frozen yogurt



Place butter in a non-stick sauté pan, melt butter on medium heat. Add bananas that have been

cut in half lengthwise. Stir in brown sugar until the bananas are well coated. Add orange juice

and cinnamon. Cook on low for two minutes. Serve with a scoop of low-fat vanilla ice cream or

frozen yogurt.
