Chicken, chicken, chicken. It seems like that is the only protein cooked and eaten at home oftentimes. To break up the routine weeknight dinner, use this recipe to spark the taste buds and liven up the plain Jane chicken sitting in the refrigerator.
1 Tbsp. Dried Parsley
1 Tbsp. Dried Basil
4 Skinless, Boneless Chicken Breast Halves
4 Cloves of Garlic, Thinly Sliced
½ Tsp. Salt
½ Tsp. Crushed Red Pepper Flakes
2 Tomatoes, Sliced
Preheat the oven to 350 degrees and grease a 9×13 baking dish. Sprinkle one teaspoon of parsley and one teaspoon of basil over the bottom of the baking dish and place the chicken halves on top. Sprinkle the chicken halves evenly with garlic slices. In a small bowl mix the remaining parsley and basil with salt and red pepper and sprinkle the mixture atop the chicken. Place tomato slices over the chicken halves, cover the dish, and place in the oven for 25 minutes. Remove the cover and continue baking for 15 more minutes or until the juices run clear.
