1 Package Yellow Rice Mix, 8oz.
1 ¼ Cups Water
2 Tbsp. Olive Oil
1 Can Black Beans, 15oz., Rinsed and Drained
1 Can Whole Kernel Corn, 15.25oz., Drained
2 Tsp. Lime Juice
1 Tsp. Ground Cumin
Bring the rice, water, and olive oil to a boil in a saucepan over high heat. Once to a boil, reduce the heat to medium-low and cover the pan. Simmer until the rice is tender, and the liquid is absorbed, 20 to 25 minutes. In a separate bowl, mix together beans, corn, lime juice, and cumin. Add the rice to the mixture, stir, and serve.
