Ingredients:
1 tbsp olive oil
1 pound of boneless, skinless chicken breast cutlets
Salt and pepper to taste
1 tsp of garlic powder
2 cups of fresh cubed pineapple
1/2 cup red bell pepper, chopped
1/4 red onion, finely diced
1/8 cup fresh basil, sliced thinly
1 tbsp cider vinegar
1 tbsp honey
Directions:
Place olive oil into a sauté pan, add chicken. Cook on medium heat. Sprinkle chicken with salt,
pepper and garlic powder. Cook chicken for about 20 minutes (or until done) flipping every five
minutes.
To make the salsa: cut fresh pineapple into small cubes, chop bell pepper into small pieces,
finely dice red onion, slice basil into thin pieces. Mix all of the cut vegetables, dash of salt,
vinegar and honey into a medium-sized bowl. Stir to combine.
Remove cooked chicken from pan and place a quarter of the salsa over the chicken. Enjoy!
