Republic Day in Trinidad occurs on September 24th this year. Why not celebrate by cooking a traditional Trinidad dish? Pelau is a stew that can be made with either beef or chicken, so feel free to substitute the beef recipe below with chicken if white meat suits your taste buds.


3 Tbsp. Brown Sugar

1 Lb. Beef for Stew, Cut into 1-inch Pieces

1 ½ Cups Water

1 ½ Cups Brown Rice

1 Cup Coconut Milk

2 Cups Fresh Pigeon Peas

1 Cup Carrot, Chopped

3 Tbsp. Fresh Parsley, Coarsely Chopped (Optional)


Place a large saucepan over medium heat and add the brown sugar. Cook until sugar begins to caramelize and add the beef, cooking until well browned. Add in the water, coconut milk, rice, pigeon peas, and carrot and bring to a boil. Cover and cook until the rice is done, about 25 minutes. Stir in the parsley to garnish. Makes six servings.
