Sautéed Shredded Brussels Sprouts



1 pound Brussels sprouts

2 tablespoons olive oil

1 clove garlic, minced

1 teaspoon smoked sweet paprika

Zest of 1/2 lemon

2 teaspoons lemon juice (or more, to taste)

1 teaspoon fresh thyme leaves


Freshly ground black pepper



Trim the Brussels sprouts, rinse in cold water. Cut each sprout in half. Slice into shreds.

Heat the olive oil over medium heat. Add the seasonings and lemon zest and sauté until crisp

and tender, about 5-7 minutes.


Remove from the stove and place in a serving bowl. Add the lemon juice and thyme. Season with

salt and pepper.
