A vegetarian option for those wishing to celebrate Trinidad’s Republic Day this month is veggie samosas. They make a great main dish or side dish, which makes them a tasty versatile option.
2 Tbsp. Vegetable Oil
4 Medium Potatoes, Peeled and Cut into 1/2-inch Cubes
½ Cup Yellow Onion, Chopped
¾ Cup Canned Peas and Carrots, Drained
1 Cup Kikkoman Thai Red Curry Sauce
Flour for Baking Sheet
12 Large Wonton Wrappers
Place a large skillet over medium heat and add the vegetable oil, potatoes, and onions. Cook, stirring constantly, until soft, about 15 minutes. Add curry sauce and peas and carrots. Cook the mixture 4-5 minutes and set aside to cool.
Lightly flour a baking sheet and cut each wonton wrapper in half on the diagonal to make two triangles. Spoon 1-2 tablespoons of the filling onto the center of each wonton triangle. Brush the edges with water then fold the wontons in half to form a triangle and press the edges together to seal. Transfer to prepared baking sheet.
In a deep-fryer or a deep, heavy pot, heat oil to 350 degrees F. Fry samosas a few at a time, turning occasionally, 2-3 minutes or until golden brown. Drain on paper towels. Serve with chutney. Makes 12 Servings.
